Beef casserole with parsley vegetables |
Ingredients:- 500 g of beef for braising.
- 6 carrots.
- 4 potatoes.
- 2 peeled tomatoes.
- 1 onion.
- 1 clove of garlic.
- 50 cl of defatted meat broth.
- 1/2 bunch of chopped parsley.
- 2 tbsp. tablespoons of olive oil.
- salt pepper.
Preparation:
Cooking: 60 minutes - For: 4 People
- Peel the onion, garlic, potatoes, and carrots.
- Chop the garlic and onion. Cut the potatoes and carrots into pieces.
- Heat the oil in a casserole.
- Brown the beef over high heat for 8 minutes.
- Then add the chopped onion, carrots, potatoes, garlic, tomatoes and cook over high heat for 5 minutes.
- Wet with the beef broth, cover, and simmer for 1 hour.
- Add the chopped parsley and mix.
- Adjust the seasoning if necessary.
- Serve hot.
