Beef casserole with parsley vegetables for a light lunch
Beef casserole with parsley vegetables
Ingredients:

  • 500 g of beef for braising.
  • 6 carrots.
  • 4 potatoes.
  • 2 peeled tomatoes.
  • 1 onion.
  • 1 clove of garlic.
  • 50 cl of defatted meat broth.
  • 1/2 bunch of chopped parsley.
  • 2 tbsp. tablespoons of olive oil.
  • salt pepper.

Preparation: 
Cooking: 60 minutes - For: 4 People

  1. Peel the onion, garlic, potatoes, and carrots.
  2. Chop the garlic and onion. Cut the potatoes and carrots into pieces.
  3. Heat the oil in a casserole.
  4. Brown the beef over high heat for 8 minutes.
  5. Then add the chopped onion, carrots, potatoes, garlic, tomatoes and cook over high heat for 5 minutes.
  6. Wet with the beef broth, cover, and simmer for 1 hour.
  7. Add the chopped parsley and mix.
  8. Adjust the seasoning if necessary.
  9. Serve hot.
