Fresh Mint Kiwi Gazpacho
For 2 People
- 2 Kiwis.
- 1 tsp. of Honey.
- 1 Half-Orange.
- Fresh Mint.
Preparation:
- Cut the Kiwis in half and collect their pulp with a spoon.
- Pass it through a blender and add a few ice cubes to it. Reserve in the fridge.
- Zest the orange and extract the juice.
- In a deep bowl, combine the honey and orange juice.
- Add the Kiwi puree and pour the resulting gazpacho into 2 glasses.
- Decorate with chopped mint leaves and some orange zest. Serve frozen.
